In 2007, the desire of many people to eat less meat is reflected in brisk sales of vegetarian items in markets. According to one survey, grocery store sales of vegetarian foods grew almost threefold, from $650 million in 1998 to $1.6 billion in 2003. Plant foods provide beta-carotene, vitamins C and E, phytonutrients, fiber and minerals-all important in preventing disease. This food demonstration shows how herbs contribute in two very important ways to vegetarian meals: first by adding phytonutrients, and second, by keeping taste buds happy.
